1) Tuscan Bruschetta or Fettunta
Ingredients for 4 people:
- 8 slices of thinly sliced day old Tuscan bread,
- 1 garlic clove,
- extra virgin olive oil,
- salt and pepper,
- 2 chopped ripe tomatoes ( optional).
Lightly toast the bread under the grill (or on the BBQ), rub each sliced with
garlic and arrange on a serving plate, sprinkle some salt and pepper on top and
coat with extra virgin olive oil, add the tomatoes. Serve warm.

2] Spelt soup (farro)
For the soup:
- 200 gr Garfagnana spelt,
- 1 Kg potatoes
- 1/2 Kg fresch borlotti beans,
- 1 onion,
- 1 stalkcerery,
- 2 carrots,
- 2 courgettes,
- 1 handful green beans,
- 1 leek,
- 2 ripe tomatoes,
- 2 cabbage leaves,
- a little parsley,
- 2 leaves of chard,
- 100 gr ham with pork rind,
- salt
For the pesto:
- Basil,
- garlic,
- parsley,
- grated parmesan cheese,
- and extra-virgin oil.
Heat 51 of water in a large pot. When it's boiling add the prosciutto
and all the previously diced vegetables, leaving one potatoes whole
and shelling some of the beans. Cook for about 2 hours. In the
meantime clean and wash the spelt. When the vegetables are cooked
add the spelt and cook for another 40 minutes. Prepare the pesto
and add to the soup; remove from the heat when the spelt is cooked
